There is the thinking about what to get (and when I skip this step it is pretty bad).
Then there is the gathering of food (which usually means I have to go to a few stores).
And finally the prepping and cooking of food.
Needless to say there is a lot that goes into this particular job. Don’t even think about the dishes afterwards.
So this week I am trying something a little different, organizing our meal plan. Hopefully it will make the fixing and cooking and serving of food a little easier!
Monday, Black Bean Chili & Rice with Cornbread

This morning, the first thing I did before I even put on my oatmeal pot was start on my chili. I use a black bean and kidney bean mix. I add onions, green and red peppers, carrots, and corn kernels. I add chili seasoning, diced tomatoes, water and veggie bouillon. I let it simmer for a long time. It makes the house smell so good!
Tuesday, Left Over Sunday Dinner

Tuesday is a late day for us because of ballet class. Coming home late and figuring out what is for dinner was simply painful for all. Now, I make sure we have enough left-overs from Sunday’s dinner to eat Tuesday night. The only thing required is heating up! This Tuesday we will be having roasted chicken, mac & Cheese and salad.
Wednesday, Pasta and Sauce

Wednesday is truly hump day. By the time it comes around we are all looking forward to the weekend. Wednesday I do cook, but it has to be something quick, easy and wholesome. Nothing is easier than pasta and delicious sauce. Comfort food in the middle of the week!
Thursday, Lentil Soup & Bread

Thursdays is home group night which means we are usually eating on the run. Everyone will be getting their Lentil Soup and bread to go. Lentil soup is a weekly must have because it is so easy and yummy. In our family it is a crowd pleaser!
Friday, Turkey Burger Sliders and Salad

Friday is fun day! The kids really look forward to having a fun meal to go along with family movie night. This week Mini Turkey Burgers should be a crowd pleaser. I will compliment the burgers with a side of fresh cranberry sauce and salad, we won’t even miss the fries!
Saturday, Pizza & Salad

We are huge fans of pizza, especially when it is homemade. This Saturday we will roll out dough and let each person create their own pizza!
Sunday, Salmon, Candid Yams and Broccoli

I really look forward to Sunday dinner. It is such a great way to both end and begin the week. I try to have the majority of my Sunday dinner cooked on Saturday.

I only know we’ll be having left over Sunday dinner at some point and that I want to make my taco soup this week. Other than that, I’m still figuring it out, but yours looks like a yummy menu. 🙂
